Recipes

For my beloved Notebook, I am looking for quick and easy recipes to put in it. If anyone has recipes they would like to share, I would be so happy. Even the basics like Tator-Tot casserole are great to have, because honestly, I just learned how to make that one last year!! So, if you want to share, email me or leave it in comments. BTW, Lali, I would love to have your Swedish Steak recipe, that was great when you made it for us! I will repost any I get so we can all enjoy! Thanks!

Swiss Steak:
1 lb stewing beef or top sirlion
1 can tomato sauce
1 sliced green bell pepper
1 sliced yellow onion

coat the beef in a flour/salt/pepper mixture and fry with 1 tbsp of oil (use more if needed). when no longer pink, add tomato sauce, bell pepper, and onion. let cook on low for 45 min. Serve over rice.

Here are a few of our favorites:

Chicken Divan (a great way to hide broccoli, although I know how much everyone in your crowd loves it)

2 large stalks broccoli, chopped
2 cooked chicken breasts, chopped
2 cans cream of chicken soup
1/3 c. mayo
splash of lemon juice
2 slices of bread
shredded cheddar

Preheat Oven to 350.

Depending on how you like your broccoli, leave raw for crisp or steam in Micro wave 2 or 3 minutes for soft (especially if you are using a lot of the stock instead of just heads)

Mix soup, mayo, and lemon juice in bowl, add cooked chicken and broccoli. Stir. Put into 9x13 casserole dish. Grate cheddar on top.

Toast two slices of bread and crumble on top of casserole.

Bake at 350 for about 30 min or until cheese is melted and dish is hot.


Beef Stroganoff:

1 pkg egg noodles
2 Tbsp butter
1 large onion, chopped fine
2 cloves garlic, minced
1 can mushrooms
1 lb. cooked ground beef (or strips of precooked steak)
1 1/2 c. beef broth
3 Tbsp lemon juice
2 Tbsp. flour
Water as needed
8 oz. pkg sour cream

Cook noodles as directed on pkg.

Melt butter in large skillet or sauce pan, saute onions and garlic till soft, mix in mushrooms and cook 2 minutes more. Add beef and stir.

Add broth and lemon juice. Bring to boil. While this is heating, mix your 2 Tbsp of flour with enough water to make a smooth paste (kind of the thickness of sour cream).

When mixture boils, reduce heat to simmer. Stir constantly, and slowly add flour paste to thicken. Return to boil, cover, and simmer for 5 minutes. Remove from heat and stir in sour cream till smooth. Serve over egg noodles.


Ham and Scalloped potatoes (Or, what to do with leftover ham when you're tired of sandwiches):

Leftover ham
Potatoes, peeled
Milk
Pat of butter

Layer in crockpot - ham on bottom, potatoes in middle, ham on top (quantity depends on size of crock pot and amount you want to make).

Fill crock pot with milk. Place pat of butter on top. Let cook for several hours. Will produce a fabulous ham and potato soup that will make you forget its leftovers.
